Courgette & Chamomile Cake
The Cake
150g Plain flour
50g Brown sugar
1 tsp. Baking powder
2 Courgettes, grated
2 Eating apples
2 Bananas, ripe and mashed
4 Chamomile teabags
2-3 Eggs
2 Lemons, zest & juice
3 Squares of good quality chocolate
1 tsp. extra brown sugar
The Method
Pre-heat the oven to 190c.
Grease and line a small loaf tin.
Grate the courgette and apple.
Mash the banana and place all three in a large mixing bowl.
Snip the tops of the teabags and empty the contents in with the fruit.
Add the sugar, flour, baking powder and lemon zest.
Add the eggs and beat the mixture vigorously until smooth.
Turn the mixture into the cake tin and bake for 30-35 mins or until the cake tester comes away clean.
Once cool turn the cake out and drizzle with the lemon juice to make it extra moist.
Grate 2-3 squares of chocolate on the top, plus a light sprinkling of brown sugar to give it a sweet and crunchy bite.
